HONEY GINGER SYRUP:
Peel and slice a 3 inch piece of ginger. Add ½ cup of honey, ½ cup of water, and sliced ginger to a pot and bring to a boil. Reduce heat and simmer for 5 minutes, then allow the syrup to cool. Strain and store in the fridge. Makes enough for 6 drinks.
Cocktail:
Combine all ingredients (except soda water) in a shaker. Add ice. Shake. Strain into a mason jar over ice. Top with soda water. Garnish with lemon wedge.
